Scrape out seeds and stringy pulp from each squash half, leaving a large cavity for stuffing. Arrange snugly in a large, lightly oiled ovenproof baking dish. Mix together the panko, Parmesan and chopped parsley in a small bowl and sprinkle on top of the stuffed squash.   1. Cut your summer squash in two in the direction that will allow you to make baskets best..
  2. Empty your squash leaving 1/4" of flesh all around and reserve the flesh..
